- 60 gr queso Roquefort
- 1 clara de huevo
- 20 gr mantequilla
- 60 ml leche
- Nuez moscada (al gusto)
- Sal

- Lo primero que vamos a hacer es precalentar el horno a 200º, y mientras lavamos y secamos muy bien las patatas.

- Pondremos las patatas dentro del horno y dejaremos aproximadamente durante una hora, recuerda que esto puede variar en función del tamaño de tus patatas. Yo te recomiendo que para comprobar que ya están listas las pinches con un cuchillo, si al pinchar notas algo duro por el centro deberás dejarlas más tiempo, por el contrario si pinchas y está blando ya las puedes retirar del horno.

- Cuando las patatas estén listas, tienes que dejar que se enfríen un poco para no quemarte y con ayuda de un cuchillo debes partirlas por la mitad a lo largo. Y con ayuda de una cucharita las empezamos a vaciar.


- Cuando tengamos todas las patatas vacías las aplastamos un poco, con ayuda de un pasapurés o un tenedor, hasta obtener una masa homogénea.

- Añadimos el queso, la mantequilla que puedes derretir antes o como me ha pasado a mí que se ha fundido con el calor residual de las patatas, agrega la nuez moscada, la pizca de sal, la leche templada y remueve todo muy bien.

- En este momento, separa la yema de la clara del huevo. Bate la clara hasta ponerla a punto de nieve. Sabremos que está a punto de nieve porque podemos darle la vuelta al bol y la clara no se cae. Se la agregamos a la mezcla de las patatas y removemos con movimientos suaves hasta que se mezcle todo.


- Con la mezcla que nos ha salido, volvemos a rellenar las patatas y pondremos en el horno a gratinar durante 10 minutos a 200º aproximadamente.
